When presented with the opportunity to have a booth at the second annual BaconFest in St. Joseph, Highland Community College employee Dawn Fleishans was excited to take the pig by the ears and take on the challenge of how to prepare 15 pounds of bacon using BaconFest’s Star Wars theme. Working with her husband, Matt, and Highland’s HR Director, Eileen Gronniger, Fleishans combined the Star Wars theme with the Highland mascot and created Scottie Sabres using large pretzel sticks wrapped in bacon and dipped in chocolate and Scottie detonators, bacon-infused peanut butter balls also dipped in chocolate. She then had t-shirts made with May The Scottie Be With You, collected College items for giveaways and decorations, and came away with the People’s Choice Award. That Award came from patrons of the event who liked Fleishans’ display and bacon items enough that they donated the most money, which was then donated to the Dream Factory. Fleishans is already thinking about her approach to next year’s BaconFest.
